Hi! My name is Amy. I am a full time mother and wife and a part time crafter and designer...not to mention a part time special education assistant. I am a little goofy (okay, maybe a lot), extremely loyal, and unfortunately very forgetful...to which I blame on genes and my creative brain. I started Punky Bowtique almost a year after my daughter was born. I have always loved the look of boutique bows and outfits, but thought that they were outrageously priced. My solution? Make my own. Since then, I have been making quality items at a fraction of the price...not only for Ashlynn, but for family and a small following! I have also taken my hand at craft shows and found myself to be quite successful there. Overall, I am just a crazy left-hander with an obsession for accessories!

Black Bean and Corn Salsa

-5-6 Large tomatoes, chopped
-1 can of black beans, drained
-1 can of corn, drained
-1 jalapeno (more depending on how hot you like it!)
-1 large green pepper, chopped
-1 large onion, chopped
-2, 3, or 4 cloves of garlic (I usually use 3 or 4, but I love garlic!)
-3 Tablespoons of dry parsley
-3 Tablespoons of white vinegar
-3 Tablespoons of olive oil (I like extra virgin)
-3 Tablespoons of lemon or lime juice...whatever you have on hand
-3 Tablespoons of Grey Poupon

Put all in a LARGE bowl together and you are done!! It is so very easy and not only will it please the crowd, but it will feed one, too. Sometimes I will make it up and put it in two different bowls since it makes so much...one for home and one for the event!
